I cant offer much advice to win the lane as i have only played the matchup once before but hopefully pinpointing the reasons why she is a counter can help.
if zed ults her she will just get her ult back quicker and all in him again while his ult is on cd

also, zeds power spike is at his first back with level 6, but katarina counters that spike as well as she can just all in the zed for free because of her lower cd ultimate. Kat is considered one of the counter picks to zed because she gets to go cloth 5 into seekers while sacrificing nothing. You can start off the laning with a long sword and a couple of pots to sustain better against the Q poke. I would always go brutalizer over cutlass in this matchup cause she'll be building towards Seeker's Armguard most likely. It is tricky though and hard to win against her once she gets ahead. Remember that you'll always win in autoattack trades, her autos are really weak. If she gets on you with E, punish her with your autos and follow her for a bit (because she'll have wasted her only escape offensively by going on you).
So if you get hit by Q, be ready for her to jump in and walk away if you can. Her Shunpo (E) does barely any damage unless she's got the mark on you from her Bouncing Blades (Q). If you understand how her abilities work you can get through this much easier. So the trick as Zed is to land your poke (W->Q/E) back and simply survive through her constant bouncing blades harass. The reason she can win lane is obviously because of her constant harass/poke. In a 1v1 upfront battle, you (Zed) can auto attack her to death.
